Cooking with JFL: Nutty Pineapple Split

Everyone loves that good old-fashioned banana split and childhood memories of racing to the middle for the cherry and those classic flavors of chocolate, vanilla, and strawberry. Does it always have to be the same though? Sure you can make one with any flavor of good ice cream, and why just peanuts when there are so many options for toppings? Plus while I adore bananas there are just tons of options for flavorful fruit to accompany this treat. Here the caramelized pineapple shines with flavorful nutty ice cream. I think my favorite part is the sauce with a hint of dark rum and pleasing coffee bitterness to match with smooth Nutella chocolaty flavor. Here’s an option I love based on a theme.
JFL’s Nutty Pineapple Split
1 scoop pistachio gelato
1 scoop coconut gelato (Or black walnut if you don’t like coconut)
1 scoop butter pecan
2 tbsp Nutella coffee sauce
2 tbsp slice almonds
2 Spears of caramelized pineapple
whipped cream

Assemble in a chilled dish and serve immediately.
Nutella Coffee Sauce
¼ cup espresso
½ cup Nutella
1 tbsp dark Jamaican rum (Myers, optional)
1 tbsp brown sugar (if you omit the rum)
Pour hot espresso over Nutella, Add rum or sugar and stir until smooth and thinned. For our espresso we use a stove top pot with Cafe Bustelo.
Caramelized Pineapple

Cut a pineapple into long spears and dip the spears in milk then roll them in sugar. Place in a hot pan over medium heat and turn once every 30 minutes until they begin to soften and brown a bit. Then serve. Watch out they get sticky!
There’s no reason this classic has to get boring. So long as you use a high quality ice cream and share with friends there’s a hundred ways to make a good split. Give it a try next time you have a sweet tooth. We whipped this up in less than 15 minutes to boot!
