JFL’s Valentine’s Day treat: Sweetheart Salmon Fritters

Valentine’s Day is here and we don’t all have the money to spend on $200 dollar dinners. Fret not, you don’t have to be Bobby Flay to make her something special. Finger foods are great for this holiday because it allows the two of you to get a little closer.

Salmon is a creamy and delicious treat. Serve these with a lighter white wine like gewürztraminer or sauvignon blanc.

These fritters take only a couple of minutes to cook and are best eaten right away while the center is still hot and creamy. To go with this we save time by adding some fresh touches to bottled tartar sauce.

Salmon Fritters

1 cup self rising cornmeal

1 cup all purpose flour

1 tsp Sugar

1 tbsp salt

1 tsp cayenne

1 tsp oregano

1 tsp lemon zest

the juice of one lemon.

¾ cup cream

2 beaten eggs

1 can pink Alaskan salmon

¼ stick of butter melted

Mix dry and wet ingredients separately save for the butter, which should be stirred into the salmon in a third bowl. Heat oil to 340 degrees and and drop tablespoon portions into oil frying for 3-4 minutes or until done.

Freshed up Tartar

1 cup premade tartar sauce

the juice of one fresh lemon

2 tsp fresh cracked black pepper

1 tbsp chopped fresh cilantro

1 tsp chopped fresh dill

1 dash Tabasco

Whisk together and store sealed in the fridge. Serve cold.

So show your sweetie you love her by getting in the kitchen this Valentine’s day. Just remember to clean up after. The number one way to lose all the points you just won is to leave dirty counters and dishes in your wake.
