Cooking with JFL: The Waffle Iron

Everyone loves waffles. I mean, come on, they are the things that just seem to scream “This breakfast is special.” Sadly, somewhere along the line the American waffle became synonymous with frozen product that tastes like an MRE.
The truth is, making real waffles, fresh, at home is easy if you have a couple pieces of equipment. Of course your going to need a waffle iron. They really don’t cost much and can be very easy to clean if you remember your nonstick spray. You can get a good one for only about $30.
The second is a mixer with a whip attachment to beat the egg whites. If you don’t have one of these your arm is gonna get a good workout, but you can do it. Either way, keeping your bowl and whisk freezer cold will help you whip it quicker.
Pina Aloha Waffles
4 eggs Separated
1 tbsp Sugar
¼ cup melted butter
1 ½ cup cream
½ cup pineapple juice
½ tsp vanilla
½ tsp pineapple puree
2 cups flour
2 tsp Baking Powder
½ tsp salt
Preheat your waffle iron according to the instructions on the manual, making sure to use a nonstick spray. Combine the dry ingredients in a bowl and whisk to combine, then in a second bowl whisk together the sugar and egg yolks until pale yellow. Add pineapple, vanilla, cream and melted butter to the yolks. Combine the two bowls and whisk until just blended. In a third bowl whisk the egg whites vigorously to soft peaks; fold into the batter gently with a rubber spatula. Pour just enough batter in to cover each grid and cook for two to three minutes. Then serve and top with whipped cream, pineapple slices and chocolate sauce.
Coco Chocolate Sauce
1 cup Cocoa Powder
¾ cup water
½ cup coconut cream
½ cup sugar
Stir together on medium heat until it is just about to boil, stirring often so all the powder’s dissolve.
If you don’t like chocolate sauce or just don’t wanna dirty a pan, use honey. I love honey on my waffles. Of course caramel, jelly and syrup are good, too. Pecans and hazelnuts also make a good topping as does whipped cream.
So take the time to make the family a special breakfast, it might just make you realize what all the waffle fuss is about!
